Cutlery Pro Shop offers cutting-edge knife services

ASHWAUBENON – A new store in Ashwaubenon offers customers on point advice when it comes to all things cutlery related.

Cutlery Pro Shop, located next to Red Robin on Oneida Street, offers the top of the line when it comes to kitchen knives, knife sharpening and advice.

For Peter Burback, store owner, this isn’t his first foray into the culinary world.

Burback used to own Cooks Corner, which dealt with all things kitchen related.

The Cutlery Pro Shop is more to the point.

“I thought I was focused before, but now I’m hyper focused,” Burback said.

With his decades of experience at Cooks Corner Burback has made a few friends around the world who know a thing or two about knives.

More than 1,000 knives from the top brands are showcased at his new store, including Wusthof, Shun, Buck, Zwilling J.A. Henckels, Myabi, Kikuichi, Lamson, Victorinox and more.

“It’s the heart of a kitchen, a good knife,” Burback said.

The Cutlery Pro Shop caters not only to professionals but to aspiring cooks as well.

Knives there range from $1 to $500 and will help make work in the kitchen easier than before.

“If you’ve never had a good knife, it’s a life changing experience,” Burback said.

To set the Cutlery Pro Shop apart, Burback invested in the Perfect Edge Knife Sharpening System.

“This is the best system in the world,” he said. “We can repair knives, sharpen them, and put on a better edge than when they come new out of the box.”

Grocery stores also offer knife sharpening, but those systems can make the blade worse, oftentimes less geometrically sound.

Burback and his staff went to San Francisco to train on his system under the tutelage of Mike Solegui, a professional knife sharpener. The results are second to none.

“There’s no one that can do a better job sharpening with the system we have and the training we have,” he said.
Even ceramic and serrated blades can be sharpened on his system.

The Cutlery Pro Shop also offers people the ability to take a blade on a test slice with potatoes or tomatoes.

“Knowledge is what we do,” Burback said. “We also offer knife skills classes.”

There is also a selection of knives for all things outdoors, from fishing to deer hunting.

In addition to catering to the home chef, Burback also offers an exchange service with restaurants with a rotating supply of knives to ensure they are always sharp.

His knife suppliers are also excited for the store, which opened in November.

“Finally we have the combination of a really good merchant that is willing to invest in a store that sells, sharpens and educates all about the most useful tool in your kitchen,” said Scott Severinson, senior vice president of business development for Zwilling J.A. Henckels.

Wusthof, which comes from Solingen, Germany, where people know their knives like Wisconsin knows its dairy, is also excited to be on board.
